Hearty Cottage Pie

Ingredients:

  • 1 pound ground beef
  • 1 cup finely chopped onions
  • 2 cups thawed frozen corn
  • 2 cups thawed frozen peas
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons minced garlic
  • 1 tablespoon cornstarch
  • 1 teaspoon beef bouillon granules
  • 1/2 cup cold water
  • 1/2 cup sour cream
  • 3-1/2 cups mashed potatoes
  • 3/4 cup shredded cheddar cheese

 

Instructions:

  1. In a skillet over medium heat, brown the ground beef and finely chopped onions. Once the beef is no longer pink, drain the excess grease.
  2. Add thawed corn, peas, ketchup, Worcestershire sauce, and minced garlic to the skillet. Reduce heat to medium-low, cover, and simmer for about 5 minutes.
  3. In a separate bowl, combine cold water, cornstarch, and beef bouillon granules. Mix well, and add this mixture to the beef and vegetable mix. Allow it to gently boil and cook until the sauce thickens.
  4. Introduce sour cream into the mixture and heat through for added creaminess and flavor.
  5. Preheat your oven’s broiler function.
  6. Transfer the beef and vegetable mixture to an oven-safe casserole dish, ensuring an even spread.
  7. Spoon the prepared mashed potatoes evenly over the top, creating a smooth layer.
  8. Finish by generously sprinkling shredded cheddar cheese over the mashed potatoes.
  9. Place the casserole dish under the broiler for a few minutes until the cheese turns golden and bubbly.
