For the mashed potatoes:
- 3 cups frozen mashed potatoes (e.g., Ore-Ida Steam n’ Mash)
- ⅓ cup 2% reduced-fat milk
Instructions:
- In a large nonstick skillet, heat olive oil over medium-high heat. Add ground beef and cook for 6 to 7 minutes, breaking it into crumbles as it browns.
- Include chopped onion, turnip, carrot, rosemary, and minced garlic. Sauté for an additional 6 minutes or until veggies are tender, stirring occasionally.
- Whisk together unsalted beef stock and all-purpose flour. Pour into the skillet, bring to a boil, then simmer for 4 minutes or until it thickens.
- Add frozen green peas, black pepper, and kosher salt to the skillet. Stir well. Preparing the mashed potatoes:
- Place frozen mashed potatoes in a microwave-safe dish, cover with plastic wrap, and microwave on HIGH for 6 minutes.
- Once done, add reduced-fat milk to the potatoes and mash to your desired consistency. Assembling the dish:
- Divide mashed potatoes evenly among four shallow bowls.
- Top mashed potatoes with the beef mixture.
