Ingredients:

  • 1 can (10 1/2 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  •  2 tablespoons chopped pimiento (optional)
  • 1 cup frozen green peas (about 4 1/2 ounces)
  • 2 cans (about 5 ounces each) tuna in water, drained
  •  2 cups cooked egg noodles (approximately 4 ounces dry)
  • 2 tablespoons plain dry breadcrumbs
  • 1 tablespoon melted butter

 

Instructions:

  1.  Preheat Oven: Begin by preheating your oven to a toasty 400°F (200°C). Grease a 1 1/2-quart casserole dish generously with grass-fed butter and set it aside.
  2.  Prepare Noodles and Veggies: In a large saucepan, bring 4 cups of water to a boil. Add the cauliflower and broccoli florets, and blanch for a quick 90 seconds. Drain and set aside. Cook the broad noodles in the same boiling water until slightly undercooked, around 2-3 minutes less than al dente. Drain and transfer them to the prepared casserole dish along with the blanched veggies and drained tuna.
  3. Create Creamy Roux: In a separate medium-sized bowl, blend olive oil and all-purpose flour, creating a smooth roux. Cook for about 90 seconds until slightly thickened. Gradually whisk in milk, chicken broth, and dry mustard, ensuring a well-incorporated, creamy mixture. Season with salt and cracked black pepper to taste.
  4. Combine and Bake: Pour the creamy mixture evenly over noodles and vegetables in the casserole dish. Generously sprinkle panko breadcrumbs over the top, followed by a dusting of grated Parmesan cheese. Bake in the preheated oven for 35 to 40 minutes, or until the breadcrumbs develop a golden-brown hue.
