Ingredients:

For the Velvety-Mashed Potatoes:

  • 4 large potatoes, peeled and finely diced
  • 1 tablespoon butter
  • 1 tablespoon finely chopped onion
  • 1/4 cup shredded cheddar cheese
  • A pinch of salt and pepper for enhanced flavors

Savory Meat Filling:

  • 5 carrots, finely chopped
  • 1 tablespoon wholesome vegetable oil
  • 1 finely chopped onion
  • 1 pound ground lamb or beef, according to preference
  • 2 tablespoons flour for thickness
  • 1 tablespoon ketchup for a subtle tang
  • 3/4 cup savory beef broth
  • 1/4 cup shredded cheddar cheese

 

Instructions:

  1. Boil the diced potatoes in a large pot until tender. Drain, return to the pot, and create a creamy mash with butter, chopped onion, shredded cheddar cheese, salt, and pepper. Set aside.
  2. Preheat your oven to 375°F (190°C).
  3. In a separate skillet, heat vegetable oil and sauté the finely chopped onion until translucent.
  4. Add the finely chopped carrots and sauté until they begin to soften.
  5. Introduce the ground lamb or beef, cooking until browned. Drain the excess grease and return it to the skillet.
  6. Sprinkle flour over the meat mixture and stir. Add ketchup and beef broth, bringing the mixture to a gentle boil. Reduce the heat and let it simmer for about 5 minutes.
  7. Assemble your pie by spreading the meaty filling into a 2-quart casserole dish, creating a solid base.
  8. Spoon the creamy mashed potatoes on top, forming an enticing layer. Generously sprinkle the remaining cheddar cheese over the potatoes.
  9. Bake in the preheated oven for about 20 minutes, or until the potato topping turns golden brown.
