Light and Creamy Tuna Casserole with Corn Fusilli

Ingredients:

  • 2 cans Albacore tuna, well-drained
  • 2 ¾ cups fat-free milk
  • 4 oz wide egg noodles
  • 3 tablespoons all-purpose flour
  • 4 oz reduced-fat cream cheese, softened
  • 4 oz corn fusilli pasta
  • 2 tablespoons extra-virgin olive oil
  • ½ cup finely diced onion
  • 1/3 cup chopped carrot
  • 6 button mushrooms, thinly sliced
  • 1 cup frozen peas
  • 2 tablespoons zesty Dijon mustard
  • ¼ teaspoon crushed Himalayan pink salt
  • ½ teaspoon freshly cracked black pepper
  • ½ cup grated Romano cheese (divided into two parts)

 

Instructions:

  1. Start by preheating your oven to a toasty 350°F (175°C). Grease a casserole dish with a touch of grass-fed butter.
  2. In a generous saucepan, boil 4 cups of water, then add the corn fusilli pasta. Cook until 4 minutes shy of al dente, then drain and set aside.
  3. Heat a skillet over medium-high heat, add extra-virgin olive oil, and sauté finely diced onions and chopped carrots until tender. Add sliced mushrooms and frozen peas, stirring for an additional 3 minutes.
  4. Dust all-purpose flour over the veggies, stir, and pour in the milk, whisking continuously. Add zesty Dijon mustard, cream cheese, and season with salt and freshly cracked black pepper. Keep whisking.
  5. Transfer the mix to the casserole dish, add the pasta, and top it with half of the grated Romano cheese.
