Quick & Easy Upside-Down Shepherd’s Pie

Ingredients:

For the beef mixture:

  • 1 tbsp olive oil
  • 10 oz 90% lean ground beef
  • 1 cup chopped onion
  • ½ cup chopped turnip (about 3 oz.)
  • ½ cup chopped carrot (approx. 1 medium carrot)
  • 2 tsp chopped fresh rosemary
  • 4 garlic cloves, minced
  • 2 cups unsalted beef stock
  • 2 tbsp all-purpose flour
  • 1 cup frozen green peas
  • ½ tsp black pepper
  • ⅓ tsp kosher salt

For the mashed potatoes:

  • 3 cups frozen mashed potatoes (e.g., Ore-Ida Steam n’ Mash)
  • ⅓ cup 2% reduced-fat milk

 

Instructions:

  1. In a large nonstick skillet, heat olive oil over medium-high heat. Add ground beef and cook for 6 to 7 minutes, breaking it into crumbles as it browns.
  2. Include chopped onion, turnip, carrot, rosemary, and minced garlic. Sauté for an additional 6 minutes or until veggies are tender, stirring occasionally.
  3. Whisk together unsalted beef stock and all-purpose flour. Pour into the skillet, bring to a boil, then simmer for 4 minutes or until it thickens.
  4. Add frozen green peas, black pepper, and kosher salt to the skillet. Stir well. Preparing the mashed potatoes:
  5. Place frozen mashed potatoes in a microwave-safe dish, cover with plastic wrap, and microwave on HIGH for 6 minutes.
  6. Once done, add reduced-fat milk to the potatoes and mash to your desired consistency. Assembling the dish:
  7. Divide mashed potatoes evenly among four shallow bowls.
  8. Top mashed potatoes with the beef mixture.
