Ingredients:

  • 3 cups coleslaw mix
  • 4 tablespoons chopped green onions (divided)
  • 1/4 cup diced red pepper
  • 1/4 cup diced green pepper
  • 3/4 cup cooked and drained frozen corn
  • 1 can (11 oz.) mandarin oranges, drained and divided
  • 1/2 cup mayonnaise
  • 2 tablespoons sugar
  • 1 tablespoon raspberry vinegar
  • 1 tablespoon lime or lemon juice

 

Instructions:

  1. In a large mixing bowl, combine the coleslaw mix, 3 tablespoons of chopped green onions, diced red pepper, diced green pepper, cooked and drained corn, and most of the mandarin oranges, reserving 6 orange segments for garnish.
  2. In a separate bowl, prepare the dressing by mixing the mayonnaise, sugar, raspberry vinegar, and lime or lemon juice. Blend until the dressing is well combined.
  3. Pour the tangy dressing over the coleslaw mixture. Toss everything together thoroughly, ensuring the salad is evenly coated with the dressing.
  4. Garnish your Zesty Mandarin Coleslaw with the remaining chopped green onions and the reserved mandarin orange segments. This adds both color and a burst of citrusy flavor.
